Tomato Butter Bean Curry with Pork Skewers(for 2)番茄白豆咖哩配豬里脊串(兩人份)

Curry would be an ideal option if you are rush for a meal, no matter eat alone or with your families. It goes well with noodle, bread, rice, as toppings or serve aside, spicy or mild, savory or sweet. Only takes few minutes to prepare and it’s a good way to clean your refrigerator.


I’ve had this tomato butter bean curry in a Indian restaurant before. I thought it might be spicy because of the red color, however it turns out that i’m totally wrong. The fruity, sour flavor from tomato lifts the dish and butter bean makes this curry creamy but not heavy. Then I decided to make my own home-cooking version as it’s so easy for me to gather all the ingredients(I always get canned tomatoes and beans in the pantry). I will list down the brands I used or your reference. Feel free to change them with any else brands you like and you can easily get from nearest grocery stores. And ya, of course, use fresh tomatoes instead of canned one if you happen to have some 😜


Tomato Butter Bean Curry


Ingredients

Tomatoes - 1 can(500g, Papa Alfredo Chopped Tomato)

Butter Beans - 1 can(425g, EDEN Organic Butter Beans)

Vegetable Broth/Chicken broth - 100ml Heavy Cream/Coconut Milk - 250ml

Spicy Curry Cube - 2 cubes (House, THE CURRY, Dry Spicy)

Cumin Seeds Powder - 2 tsp

Paprika - 2 tsp

Fresh cilantro - For sprinkle












Steps

  1. In a non-sticky pot, cook tomatoes at medium heat till they release nice flavor.

  2. Add in drained butter beans, broth, cumin seeds powder, paprika, stir well. Stew at medium heat for 5 mins.

  3. When butter beans become soft, turn to low heat, then add curry cube, heavy cream. Stir gently and cook for 10 minutes until sauce reduces and thickens. Taste and add more seasonings if needed.

  4. Top with a generous serving of fresh cilantro and serve.

Pork Skewers


Ingredients

  • Pork tenderloin - 200g

  • Salt - 1/2 tsp

  • Grounded Mix Pepper - 1/2 tsp

  • Rosemary Spices - 1/2 tsp

  • Olive Oil - for brushing

  • Bamboo Skewers - 8 pcs


Steps

  1. Marinate pork - Cut pork into bite-sized cube. In a bowl, mix pork with salt, grounded pepper and rosemary spices, massage pork cubes for a while then let it marinated for at least 15 mins

  2. Thread the pork onto the skewers and brush a thin layer of olive oil. Heat the pan, line the skewers on it, the cook one side until slightly caramelized on the outside, then do the same with another side.

  3. Serve warm with curry and rice
