Ingredients
Strong Flour - 310g
Warm Water - 170ml
Olive Oil - 4 tsp
Dry Yeast - 6g
Salt - 6g
Sesame - for sprinkle
For Baking Soda or Lye Bath
Baking Soda or Soda Ash - 15g
Cold Water - 500ml
Steps
1. Active yeast - Whisk all the yeast in warm water. Let it rest for 10mins. You will see lots of bubble floating.
2. While activating the yeast, weigh strong flour and salt in a big bowl. Mix them well.
3. Dig a hole in the middle of flour, and pour all the yeast liquid. Using a spatula to continually fold flour in till the dough forms its shape.
4. Turn the dough out onto a floured surface. Knead the dough for 5 minutes then add 4 tsp of olive oil one at a time(Knead the dough each time till oil is completely absorbed by dough before adding another tsp) . Keep kneading till the dough become smooth. Cover the dough lightly with a dry cloth and allow to rest for 10 minutes.
5. Cut the dough evenly to 4 pieces and shape each to a small roll. Cover lightly with a dry cloth and allow to rest for another 10 minutes.
6. Shape your 🥨- Roll each dough into a long 50cm(around 20inch) rope. Shape it like a roller with thinner ends. Take the ends and draw them together so the dough forms a circle. Twist the ends to a knot, then bring 2 ends to the opposite side and press them down into a pretzel shape🥨 you can touch the ends with bit water to help them stick.
7. Transfer pretzel doughs to a baking pan covered by a silicones baking sheet. Leave it uncovered for 30mins.
8. Move the whole baking pan to refrigerator for at least 1 hour. You can even store it there overnight then bake in the morning.
9. Preheat oven to 220°C (428°F)
10. Prepare Baking Soda Bath - Dissolve Baking Soda in hot water or Soda Ash into cold water (!! Never use hot water for Soda Ash and never pour water to Soda Ash)
11. Wear a glove if you’re going to using Lye bath . Soak Pretzel doughs in Baking Soda Bath , 30 seconds for each sides.
12. Place pretzel back onto prepared baking sheet. Sprinkle each with sesame.
13. At 220°C (428°F), bake for 12-15mins until browned.
14. Enjoy it while it’s hot with Extra Virgin Olive Oil or any other dipping sauce you like.
